Food Equivalents

Some of the equivalents vary a bit, I have noted all variations.

 

ALLSPICE

1 oz of allspice = 4 1/2 tbsp

 

ALMONDS

1 lb almonds, in shell = 1 - 1 3/4 cp nutmeats

1 lb almonds, in shell = 3/4 - 1 cp shelled

1 lb 2 oz almonds, shelled = 4 cps

 

APPLES, DRIED

 1 lb of dried apples = 5 cups

 

APPLES, FRESH

1 lb (3 medium) apples = 3 cups sliced

 

APRICOTS, DRIED

1 lb dried apricots = 3 cups

 

APRICOTS, FRESH

1 lb fresh apricots = 8 - 12

 

BAKING POWDER

1 oz baking powder = 2 1/2 tbsp

1 lb baking powder = 2 1/2 cps

 

BACON

8 slices cooked baco9n = 1/2 cp crumbled

 

BANANAS

 1 lb (3 medium) bananas = 2 1/2 cp sliced or about 2 cps mashed

1 lb of bananas = 2 large

1 lb of bananas = 5 very small

One ripe medium banana will give you 1/2 cp sliced and 1/3 cp mashed

 

BLACK-EYED PEAS

1 lb black-eyed peas = 2 1/3 cp cooked

 

BREADCRUMBS

1 oz of breadcrumbs = 1/4 cp

 

BREADS

1 lb bread = 12 - 16 slices

1 1/2 slices = 1 cp soft crumbs

4 slices bread makes 1 cup fine crumbs

3 slices of fresh white bread, finely chopped or crumbled, will give you 1 3/4 cps of soft crumbs

3 slices of well dried white bread will give you 1/2 cup of dry crumbs.

 

BROWN SUGAR

1 lb brown sugar = 2 1/4 cps firmly packed

1lb brown sugar = 2 2/3 cps

 

 BRUSSELS SPROUTS

1 lb Brussels sprouts = 4 cps

 

BUTTER AND MARGARINE

1 lb butter or margarine = 2 cups

1 lb butter or margarine = 4 lbs

1/4 lb butter or margarine = 1/2 cp

Egg size piece of butter or margarine = about 1/4 cp or 2 oz

Walnut size piece of butter or margarine = 1 tbsp

28 saltine crackers = 1 cup fine crumbs

 

CRANBERRIES

1 lb package of cranberries = about 4 cups. It will give you 4 cps of cranberry sauce.

1 lb cranberries = 4 - 5 cups

 

CREAM, HEAVY OR WHIPPING

1/2 pt heavy or whipping cream = 2 cups whipped

1 cp heavy cream = 2 - 2 1/2 cps whipped

 

CREAM OF TARTAR

1 oz cream of tartar = 3 tbsp

 

CURRY

1 oz of curry = 4 1/2 tbsp

 

DATES

1 lb pitted dates = 2 - 3 cps chopped

8 large egg whites = about 1 cup

8 - 10 egg whites make about 1 cup

12 large egg yolks = about 1 cup

12 - 14 egg yolks makes 1 cup

 

EVAPORATED MILK

6 oz can evaporated milk = 3/4 cp (or 2/3 cup)

14 1/2 oz can evaporated milk = 1 2/3 cup

 

FAT

 1 oz fat (or liquid) = 2 tbsp

2 cp fat = 1 lb

 

FLOUR

1 lb sifted flour = 4 cps

1 oz flour = 4 tbsp

There are about 3 cups of cake flour to 1 lb.

There are 3 1/3 cps of all-purpose flour to 1 lb. Sifted, this will give 3 3/4 cups.

 

FLOUR, ALL PURPOSE

1 lb all purpose flour = 4 cps sifted

 

FLOUR, CAKE

1 lb cake flour = 4 3/4 - 5 cps sifted

1 lb cake flour, sifted = 4 1/2 cps

 

FLOUR, WHOLE WHEAT

6 oz cans = 3/4 cup

 

GELATIN

1 lb of gelatin, granulated = 4 cps

 

GRAHAM CRACKERS

16 - 18 Graham crackers = 1 1/3 cps crumbs

15 graham crackers pounded to fine crumbs will give you 1 cup.

12 graham crackers pounded to coarse crumbs will give you 1 cup.

1 lb of graham crackers will yield about 4 1/2 cps of crumbs.

14 squares graham crackers makes 2 cups of fine crumbs.

 

GROUND BEEF

1/2 lb of ground meat equals about 1 cup

 

JUICE CONCENTRATE, Frozen (see "Frozen Juice Concentrate")

 

LARD

1 lb of lard = 2 cups

 

LEMONS

Juice of 1 medium lemon = 2 - 3 tbsp

Rind of 1 medium lemon = 1 - 2 tsp grated

4 oz (1 1/2 - 2 cps) uncooked noodles makes 2 cups cooked

ONIONS

1 lb onions = 3 large onions

1 lb onions = 2 - 2 1/2 chopped onions

1 medium onion = 1/2 cp chopped pieces

1/2 lb of onions will give about 2 cps sliced or chopped.

1 small onion, finely chopped, will give you 1/4 cup.

 

ORANGES

Juice of 1 medium orange = 1/3 cp

Juice of 1 medium orange = 6 - 8 tbsp juice

Rind of 1 medium orange = 2 tbsp grated

Rind of 1 medium orange = 2 tsp grated

 

PAPRIKA

1 oz of paprika = 4 1/2 tbsp

 

PARSNIPS

1 lb parsnips = 4 medium parsnips

1 lb parsnips = 2 cps cooked

 

PASTA

Pasta doubles in volume when cooked.

1 lb of noodles, cooked, will give you about 9 cups.

1 pkg (6 or 7 oz) macaroni (2 cups) = 4 cups cooked; 4 - 6 servings

1 pkg (7 or 8 oz) spaghetti = 4 cps cooked: 4 - 6 servings

Spaghetti: when broken it averages 5 cups per pound before cooking and 11 cups after cooking.

8 oz egg noodles (4 - 5 cups) = 4 - 5 cups cooked; 4 - 6 servings

4 oz (1 cp) (1 1/4 cps) dry macaroni = 2 1/4 cp cooked

 

PEACHES

1 lb dried peaches = 3 cups

1 lb peaches = about 4 - 6 peaches

A pound of peaches, sliced, will give you about 2 cups

 

PEANUT BUTTER

1 lb of peanut butter = 1 3/4 cps

A 3 lb fresh pumpkin will yield approx. 1 cup cooked pumpkin

 

PUMPKIN, MASHED, COOKED

1 lb mashed & cooked pumpkin = 1 cup

 

PRUNES

1 lb prunes = 2 1/4 cp pitted

1 lb dried prunes = 2 1/2 - 3 cps

There are 2 1/2 cups uncooked prunes in 1 lb

Cooked and pitted, there are 4 1/2 cps in 1 lb.

 

RADISHES

 6 oz radishes = 1 1/4 cp sliced

 

RAISINS

1 lb seedless raisins = 2 3/4 - 3 cps

1 lb seedless raisins = 2 - 3 cps

A 15-oz box of raisins equals 2 1/2 cups

 

RHUBARB

1 lb fresh rhubarb = 2 cps cooked

1 lb fresh rhubarb = 4 - 8 pieces

 

RICE

1 cp uncooked rice = about 3 - 4 cups cooked

 1 lb or 2 cps uncooked rice = 6 cups cooked
